Brewing
When the water boils, it's ready.
High-mountain oolong is thick-leafed and tightly rolled — it takes fully boiled water for the leaves to unfurl completely. The first steep pours out golden with a clean, gentle fragrance; the same leaves re-steep four or five times, the flavor slowly evolving with each round.
